The name “Payoyo” comes from a type of goat that is indigenous to the Mountains of Cadiz and Ronda mountains.

There is a lot of type of Payoyo cheese. Cured, semi-cured, fresh cheese, with herb coated…. … but my personal favorite is a Blue Payoyo cheese. You can buy it here in Ronda. ( We will seceretly tell you where) .It is delicious if you make a Marriage with Ronda wine.
